Blueberry Muffins with Coconut Flour

Ingredients

  • 1 1/3 cup coconut flour
  • 2 TBS arrowroot flour
  • 1/2 tsp baking powder
  • salt
  • 3 eggs
  • 3 TBS butter or coconut oil
  • 2 TBS milk (or almond milk)
  • 1 banana (or 2 TBS maple syrup)

Instructions

  • Preheat oven to 350.
  • Mix together dry ingredients in large bowl.
  • Blend together wet ingredients in separate bowl.
  • Mix wet ingredients into dry ingredients.
  • Fold in blueberries.
  • Bake 12-15 minutes.
