Blueberry Muffins with Coconut Flour
- 1 1/3 cup coconut flour
- 2 TBS arrowroot flour
- 1/2 tsp baking powder
- 3 eggs
- 3 TBS butter or coconut oil
- 2 TBS milk (or almond milk)
- 1 banana (or 2 TBS maple syrup)
- Preheat oven to 350.
- Mix together dry ingredients in large bowl.
- Blend together wet ingredients in separate bowl.
- Mix wet ingredients into dry ingredients.
- Fold in blueberries.
- Bake 12-15 minutes.
