Sweet Potato & Almond Muffins

Ingredients

  • 2 eggs
  • 1/2 cup pumpkin puree or mashed sweet potato
  • 1 banana, mashed
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp ginger
  • pumpkin seeds
  • sliced apple

Instructions

  • Preheat oven to 350
  • Blend together wet ingredients.
  • Mix dry ingredients in separate bowl and add to wet ingredients.
  • Bake for 15-20 minutes or until done.
