Sweet Potato & Almond Muffins
Ingredients
- 2 eggs
- 1/2 cup pumpkin puree or mashed sweet potato
- 1 banana, mashed
- 1/4 cup coconut oil
- 1 tsp vanilla
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp ginger
- pumpkin seeds
- sliced apple
Instructions
- Preheat oven to 350
- Blend together wet ingredients.
- Mix dry ingredients in separate bowl and add to wet ingredients.
- Bake for 15-20 minutes or until done.
